Summery Chicken Kabobs
Fire up the grill, because these kabobs are going to blow your flip flops off! lol
They are insanely simple to make, with ingredients that most people tend to have on hand. Use chicken, beef, pork, salmon, or tuna. This marinade is pretty universal and oh so tasty!
2 lbs. of chicken (or meat of your choice)
Red onion chunks
Orange, yellow and red peppers
Mushrooms are lovely as well
2 T. of minced garlic
1/3 c. coconut aminos (you can use light soy sauce)
1/3 c. honey
1 tsp. black pepper
1/4 c. vegetable oil
In a large bowl, whisk together garlic, coconut aminos, honey, and pepper. Before adding chicken, reserve a small amount (about 1/4c.) of marinade to brush onto kabobs while cooking. Place the chicken in a freezer size ziploc bag and pour half the marinade in and marinate overnight. The next day I will pour the rest of the marinade over the onions and peppers in a large glass container and marinate in the refrigerator for about 2 hours.
Preheat the grill for high heat.
Drain marinade from the chicken and vegetables, and discard.
Thread chicken and vegetables alternately onto the skewers. Lightly oil the grill grate and place the skewers on the grill. Cook for 12 to 15 minutes, until chicken juices run clear. Turn and brush with reserved marinade.
