Mexican Beef Skillet


I honestly feel this will be the fastest dinner you will ever make. It's super easy and extremely tasty! You can top it with anything your heart desires. Lettuce, tomatoes, green onions, black olives, pickled jalapenos, sour cream, guacamole, and even some crushed tortilla chips and a dash of Cholula. I honestly like to throw as many toppings on there as possible. The bigger the better. Ha ha !

Ingredients:

1 lb. ground beef

3/4 c. uncooked white basmati rice

15 oz. of your favorite salsa (I love Mateo's)

2 T. taco seasoning

1/2 c. black beans

1/2 c. pinto beans

3/4 c. corn

1 c. lite shredded Mexican cheese blend

Toppings of your choice:

Lettuce, tomatoes, green onions, black olives, avocado, pickled jalapenos, sour cream, guacamole, crushed tortilla chips, and a dash of Cholula

Directions:

Cook the rice according to the package. While the rice is cooking , grab a large oven-safe skillet and start browning the meat, until fully cooked.

While the meat and rice are cooking, preheat the oven to 375.

Add the rice to the fully cooked meat and mix together.

Pour in the salsa, taco seasoning, beans, and corn and mix all together. Sprinkle the cheese over the top and transfer to the oven. Bake for 20 minutes, until the cheese starts to bubble and brown.

Portion out between 4 bowls and top with your favorite toppings.
