Skinny Taste has this amazingly easy Slow Cooker Chicken Cacciatore recipe. I love making a large batch of it and placing the extras in individual containers in the freezer, for next weeks meals. It sure does save time. I'll take it for lunch over cauliflower rice, have it for dinner over spaghetti or I will turn it into a baked ziti'ish kind of dish. Such an easy week night meal.
2-4 servings Ingredients: 4c. Skinny Taste Chicken Cacciatore 6 oz. pasta of your choice (I used gemelli) 2 oz. grated part-skim mozzarella Fresh grated pecorino romano Fresh basil to garnish Crushed red pepper flakes Directions: Preheat the oven to 350 degrees. Bring a big pot of salted water to a rolling boil. Add the pasta and cook for 7 minutes. Drain, and reserve about a 1/4c. of pasta water. In a large mixing bowl, combine the pasta and chicken cacciatore sauce. If the sauce is super thick, add in some of the reserved pasta water, about 1/4c. Pour in a 9x9 pan, coated with cooking spray. Top with the grated mozzarella cheese. Place in the oven and bake for 30 minutes, till the top starts to turn golden and the edges start to crisp up. Top with some grated pecorino romano cheese, fresh basil and red pepper flakes.
