Jalapeno Pesto


So for lunch today, I made myself a lovely sandwich on some french bread that I got at the farmers market, with some Boars Head Ham & White American Cheese, because they clearly have the best sandwich meat & cheese around. Then, I slathered on 1 Tablespoon of this ridiculous jalapeno pesto and you would've sworn I just picked up a gourmet sandwich from a cute little cafe. I'm like why didn't I think of this sooner??? Forget the mustard and mayo. Pesto is the way to go! Packed with so much goodness and flavor and color. My afternoon just turned right around. I know it's so easy to just pick up the pesto at your grocery store, but come on. It's so much better to make it yourself. Nothing is added, it's all natural and REAL. And let's be honest, this world needs a whole lot more of real in it!

Ingredients:

1/2 c. of almonds (make sure to weigh them on a digital scale) It's a little trick I picked up. It's super accurate. 4 jalapenos, seeded 1 serrano, seeded 4 garlic cloves 1 whole bunch of cilantro, large stems removed juice of 1 lemon 1/2 c. olive oil salt and pepper Directions:

Throw the almonds in the food processor and pulse, until they are all nice and ground up. Add in the jalapeno, serrano, garlic, lemon juice and get that all nice and chopped up. We do not want to see any large chunks of garlic in there. Then add in the cilantro, the tiny stems are fine. but not the thick stems. Pulse that and then slowly stream in the olive oil. Take a little taste then add in some salt and pepper to bring it all together. Just a little side note for you.....it may seem a little spicy at first but the next day it simmers down a TON. I'm a little upset I didn't put in the 2nd serrano like I was going to. But oh well. Also this recipe makes about 22 T. I typically use a T. at a time. So I put half in the freezer and the other half in the fridge in these nifty little jars I found at the grocery store! FYI these are way cheaper here, than at my grocery store.
