Chicken Gyro Bowl
Sometimes you just want to throw it all in a bowl and dive right in. I love making bowls for dinner. It's just so easy and the possibilities are endless! This is a great summer dinner, that's not to heavy. Definitely a must to try!
Serves 2 Ingredients: Pickled red onions (do not leave these out!): 2 T. water 2 T. cider vinegar 1 tsp. sugar 1/4 c. super thinly sliced red onion Sauce: 1/4 c. Fage fat-free Greek yogurt 3/4 tsp. tahini 1 T. fresh lemon juice 1 T. water 1 garlic clove grated Bowls: 1/2 c. quinoa 1 tsp. olive oil 1/2 c. tuscan kale, chopped 3/4 c. parsley 1 tsp. onion powder 1 tsp. garlic powder 3/4 tsp. dried oregano 1/2 tsp. cumin 1/2 tsp. salt 1/4 tsp. pepper 2 6oz. skinless boneless chicken breasts 1 whole wheat pita 1/2 c. grape tomatoes 1/2 c. thinly slice english cucumber 1/4 c. chickpeas 6 black olives 1 oz. crumbled, feta cheese Directions: For the onions, combine the water, vinegar and sugar in a medium bowl and microwave for 2 minutes. Stir in onion. Let stand at room temperature for at least 20 minutes. Drain. For the tahini sauce, combine the yogurt, tahini, lemon juice, water and garlic in a small bowl. Whisk to combine and refrigerate. For the chicken, combine the onion powder, garlic powder, oregano cumin, salt and pepper in a small bowl. Heat a large skillet over medium high heat. Add the 1 tsp of oil to pan. Sprinkle chicken evenly with spice mixture. Add chicken to the pan and cook for 5 minutes on each side then cover and cook over medium low heat for an additional 10 minutes. It all depends on how thick the chicken breasts are, mine were on the thicker side. Let stand 5 minutes before slicing. For the bowls, cook quinoa according to package. Once cooked add the kale and parsley to the pan and toss with 1 tsp of oil. Cut the pita in half and warm up in a toaster, lightly. Dived the quinoa evenly between the two bowls. Top with the tomatoes, cucumber, chickpeas, olives, pickled onion and chicken. Sprinkle with feta, parsley and then top with the tahini and garnish with pita triangles.
