Turkey Chorizo & Potato Tacos
Ok, so these aren't technically chorizo, but they are pretty stinking close. I just love chorizo but I don't love all the fat that comes with it. I'm like there just HAS to be a way! So I was thinking of an alternative to pork that would be way less fatty and all of a sudden a turkey popped into my head. This is so simple and oh so good, with a lot less guilt to follow.
2 lbs. Yukon gold potatoes, peeled and cubed 1 1/2 lbs. ground turkey 1 T. salt 2 T. minced garlic 1 T. sweet paprika 2 T. chopped chipotles in adobo 1/2 tsp. ground coriander 1 tsp. oregano 2 T. cider vinegar 1 - 15 oz. can tomato sauce Directions:
So, the day before I indulge in this goodness, I like to season the meat and let it set. So in a large bowl, knead the turkey with the salt, garlic, paprika, chipotles, coriander, oregano and vinegar. Gently knead to combine and refrigerate.
In a large saucepan, cover the peeled and cubed potatoes and simmer for about 20 min. Drain and let cool. In the same saucepan add the turkey mixture and cook over medium high heat till it starts to crumble, do not fully cook. Add the turkey to the crockpot, pour in the potatoes and tomato sauce. Simmer on low for 6 hours. The meat gets so tender and saucy. I love to serve on corn tortillas with a sprinkle of chopped onion and cilantro. Finish off with a squeeze of fresh lime juice.
