Skinnytaste - Banana Nut Oat Muffins
These muffins were super easy to make and smelled AMAZING.
However I will make a few suggestions..... I would add some cinnamon to this recipe because it really needed just a hint of something. Without it they come out a little bland, but there was no way I was going to put these to waste. So I turned these into a great pre-workout snack by slathering on about a teaspoon of nutella to each side of the muffin an hour before my workout. My hubby told me nutella is a great pre-workout, so that's exactly what i did. Warm them up in the microwave for about 15 seconds and their perfectly tasty.
Cooking spray 11/2 c. oats 11/4 c. unsweetened vanilla almond milk 1/2 c. dark brown sugar, packed 1 c. mashed ripe bananas 2 large egg whites 2 T. honey 1 T. canola oil 1 tsp. pure vanilla extract 2 tsp. cinnamon 1/2 c. white whole wheat flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 3/4 c. chopped walnuts or pecans Nutella / P28 High Protein Spread - White Chocolate (it's really good) Make sure you check the serving size before you start lathering up.

Preheat the oven to 400 and line a standard muffin pan with liners. Lightly spray with cooking spray. Pour the oats into a large bowl, add the almond milk and mix well and let soak for about 30 minutes. Add the brown sugar, mashed bananas, egg whites, honey, oil, cinnamon and vanilla to the oats and mix well. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Slowly add the flour mixture to the liquid ingredients and mix with a spatula until incorporated. Fold in the walnuts. Pour the batter into the prepared muffin tins. Bake until a toothpick inserted comes out clean, 24 - 28 minutes.
