Lemon Artichoke Chicken - Paleo


Ingredients: 4 T. of butter 2 shallots 2 c. artichoke hearts - drained and rinsed and halved 1/4 c. of capers - drained Juice of 2 lemons 2 lbs. bone in, skin-on chicken legs Salt and pepper

Directions:

Preheat oven to 375 degrees. In a large oven safe skillet over medium heat, melt 2 T. of butter. Add the shallots and saute until they are translucent. Add the artichokes, capers and lemon juice. Stir until combined. Place the chicken pieces in the skillet and top each piece with the remaining 1 T. of butter. Place the entire pan in the oven for 45 minutes. I served alongside steamed green beans sprinkled with the sage salt blend and a baked sweet potato with a small pat of butter and cinnamon. I seriously think this was the easiest meal I've ever made. I love being able to to use the oven and not having to worry about turning anything or stirring. Gives me time to hang out with my company.
